(AFG-KANDAHAR) Head Salad Maker
Job Summary
The Head Salad Maker ensures that the Food Service Operations cold kitchen is maintained in a regular and consistent manner so that food quality standards are met.
Principal Accountabilities
- Meet or exceed industry standards for the preparation, storage, and serving of food in the cold preparation area
- Monitor food production and service to assure that planned menus are followed and comply with meal requirements while maintaining full production records on all meals
- Adhere to Food Safety policies and procedures
- Ensure personal hygiene and work area are clean and sanitized at all times
- Oversee the cleaning, washing, mixing, and preparation of salad items, dressings, and relishes
- Maintain the daily preparation, production, handling, storage, rotation, and serving of all salads required to meet kitchen demand and TB Med 530 standards
- Maintain accurate inventory of all food, supplies, and equipment
- Ensure recorded production, waste, and all logs are completed on a regular and consistent basis
- Perform other duties as assigned
Knowledge & Skills
- Excellent English communication skills and ability to interact effectively with customers and other personnel
- Knowledge of food service and sanitation standards
- Willing to learn and grow in food service abilities
- Mature in judgment and behavior
- Ability to multi-task and handle service points such as grille and food preparation
- Ability to consistently arrive punctually and contribute to a positive dining atmosphere
Experience & Education
- Minimum three (3) years of cold food production experience in full service or institutional food service environment
- High School Diploma or equivalent
Physical Requirements/Working Environment
- Ability to stand for long periods of time such as ten (10) to twelve (12) hours, bend, kneel, and reach to store/retrieve supplies
- Able to lift, carry, and push supplies and boxes up to 50 pounds
- Must have good vision, English reading ability, wrist movements, and physical feeling to operate food service equipment
- Able to talk and hear well to instruct employees and assist dining facility customers
- Position requires shift work, days and nights
- Living and working conditions at assignment location could be remote and uncomfortable
- Long hours, exposure to weather and hazardous conditions
- Personnel should be aware of moving on short notice and under adverse conditions
Travel
- Ability to travel domestically and internationally
