(AFG-KANDAHAR) Head Salad Maker


Job Summary

The Head Salad Maker ensures that the Food Service Operations cold kitchen is maintained in a regular and consistent manner so that food quality standards are met.


Principal Accountabilities


  • Meet or exceed industry standards for the preparation, storage, and serving of food in the cold preparation area

  • Monitor food production and service to assure that planned menus are followed and comply with meal requirements while maintaining full production records on all meals

  • Adhere to Food Safety policies and procedures

  • Ensure personal hygiene and work area are clean and sanitized at all times

  • Oversee the cleaning, washing, mixing, and preparation of salad items, dressings, and relishes

  • Maintain the daily preparation, production, handling, storage, rotation, and serving of all salads required to meet kitchen demand and TB Med 530 standards

  • Maintain accurate inventory of all food, supplies, and equipment

  • Ensure recorded production, waste, and all logs are completed on a regular and consistent basis

  • Perform other duties as assigned

Knowledge & Skills


  • Excellent English communication skills and ability to interact effectively with customers and other personnel

  • Knowledge of food service and sanitation standards

  • Willing to learn and grow in food service abilities

  • Mature in judgment and behavior

  • Ability to multi-task and handle service points such as grille and food preparation

  • Ability to consistently arrive punctually and contribute to a positive dining atmosphere

Experience & Education


  • Minimum three (3) years of cold food production experience in full service or institutional food service environment

  • High School Diploma or equivalent

Physical Requirements/Working Environment


  • Ability to stand for long periods of time such as ten (10) to twelve (12) hours, bend, kneel, and reach to store/retrieve supplies

  • Able to lift, carry, and push supplies and boxes up to 50 pounds

  • Must have good vision, English reading ability, wrist movements, and physical feeling to operate food service equipment

  • Able to talk and hear well to instruct employees and assist dining facility customers

  • Position requires shift work, days and nights

  • Living and working conditions at assignment location could be remote and uncomfortable

  • Long hours, exposure to weather and hazardous conditions

  • Personnel should be aware of moving on short notice and under adverse conditions

Travel


  • Ability to travel domestically and internationally
